Kale, Oh Kale – what makes you so hot!

My seven year old thinks I make the ‘Best’ Kale soup. And he is pretty proud of showing off at school that he is uber healthy too (I’m proud too). But honestly, he has no clue why Kale is so healthy, he just trusts his mom (thank goodness he is only seven).

It is true. Kale is a super-hot trend in eating these days. And that’s because Kale is one of the healthiest vegetables around. Did you know?

  • Kale has more iron than beef per calorie (yes, its true!!)
  • Kale is high in Vitamin K and is filled with powerful antioxidants.* (A diet high in Vitamin K can help protect against various cancers. Kale's risk-lowering benefits for cancer have recently been extended to at least five different types of cancer - bladder, breast, colon, ovary, and prostate.)*
  • Kale is also high in Vitamin A, Vitamin C and Calcium.
  • Kale is a great anti-inflammatory food and can help lower cholesterol levels.
  • Kale is a great detox food* (so next time you go on a cleanse, try a high Kale diet).*
  • *And of course, *Kale is low in calorie, high in fiber and has zero fat. (*One cup of kale has only 36 calories, 5 grams of fiber and 0 grams of fat and 10% of the RDA of omega-3 fatty acids.)*

    And one way to be sure to enjoy the maximum nutrition and flavor from Kale is to eat it the right way. Raw is the best way but you could steam for just 5 minutes or even bake in the oven. To ensure quick and even cooking cut the leaves into 1/2" slices and the stems into 1/4" lengths.

So, when we decided we would do a Kale salad as one of our products, we just didn’t pick Kale because it’s the hottest and sexiest celebrity around. It’s because its beauty with brains. It tastes great and when combined with Bison and Fig and a delicate Balsamic dressing, it’s extraordinaire.

Kale is a multi-tasker. It’s real and authentic with a bit of earthy goodness to it. It’s fresh, vibrant and sometimes edgy. How I wish it was a man!!

Allergies can change your life. Sometimes you just don't know how.

My first attempt at a blog for Greens & Beans. I'm a bit nervous; but way more excited!

I always knew I wanted to be an entrepreneur. But the lure of the corporate world and the glamour of marketing were too much for me to give up. Every two years I would have what I called the 'Career Crisis' moment. I would hate going to work. I would look forward to getting back home and start thinking of a business idea. All night I would dream about various ideas, then wake up the next morning, get ready, and drive back to the comfort of earning money.
